Lemon Rice


2 ½ cups chicken broth
1 cup uncooked rice
1 garlic clove, crushed
1 tablespoon lemon zest
2 tablespoons fresh dill
2 tablespoons butter


Mix broth, rice and garlic in saucepan. Bring to a boil, cover, and reduce heat. Cook on low heat for 20 to 30 minutes until liquid is absorbed. Add lemon rind, dill and butter.

Serve with chicken or fish
