INGREDIENTS
Servings: 8
4 ripe but firm peaches
1 package frozen wild blueberries
¼ cup sugar
1 teaspoon cornstarch
2 tablespoons lemon juice
Mint for garnish
DIRECTIONS
Slice the fruit in half and remove the pit.
Grease a grill pan with cooking spray. Place the fruit, pit side
down, on the pan and cook over medium-high heat for 5 minutes or until there are grill marks on the peaches.
To make the Wild Blueberry Sauce, mix the frozen blueberries and sugar in a saucepan. Heat on medium until the berries are thawed and start to bubble. Mix the cornstarch and lemon juice and add to the berries. Continue to cook until the sauce thickens, about a minute or two.
Place a peach half on a plate. Fill the center with the warm berries. Add a mint leaf for garnish and serve.
