Vegan Fruit Smoothies

Like many of you, I am incorporating less meat into my eating and increasing plant-based options. This fruit smoothie is satisfying for breakfast, and sustains me for a few hours. For a complete breakfast, I add a handful of nuts after enjoying the smoothie. Incorporate any frozen fruit. This is also a great way to use up those over-ripe bananas. Just slice the banana into bite size pieces, and freeze into packets of one-half banana. Using frozen bananas and frozen fruit eliminates the need for ice or sweeteners. For this photo I made a peach smoothie and a mixed berry smoothie.

Note: I add the peanut butter powder for additional protein. However whenever I use higher protein almond milk (such as the almond-cashew-pea protein) I eliminate the peanut butter powder. Our local grocery store (Kroger) does not always have the high protein milk in stock.

Ingredients:

  • ½ banana (frozen or fresh)
  • 1 cup organic frozen fruit of your choice
  • 1 tablespoon PB Fit (peanut butter powder)
  • 2 teaspoons organic chia seeds
  • 1 cup unsweetened vanilla almond mild (or other milk of your choosing)

Instructions:

  1. Put all ingredients in a blender. Set blender to “smoothie” setting, and blend away. It may take a couple of stirs and spins at this setting.

  2. Pour into a glass and enjoy a healthy and refreshing breakfast.
