There are days we get “stuck in a muffin rut” and this sounded like just the ticket to raise us out of our rut!
Strawberry Orange Muffins

- 1 1/2 cup chopped strawberries
- 1/4 cup fresh orange juice
- 2 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (softened)
- 1 1/2 teaspoons grated orange zest
- 2/3 cup sugar
- 2 large eggs
- 1/2 cup milk
- sifted confectioners' sugar
- orange juice
Instructions:

Preheat oven to 350.

Sift flour, baking powder and salt into a medium bowl and set aside.

In the bowl of a standing mixer cream the butter, orange zest and juice as well as 2/3 cup of sugar. Cream until light and fluffy.

Scrape down the sides of the bowl and add eggs one at a time.

Add the flour alternately with the milk and then fold in the strawberries.
Combine. -
(We make this the night before and refrigerate. We fill the muffin cups in the morning and bake allowing a bit of extra time since the batter is cold)
Bake 17 minutes. -
For a glaze combine sifted confectioners' sugar and orange juice until the consistency you enjoy. Spoon glaze over muffins.
