Spinach Brownies

Yes, we said spinach! These are a Broad favorite with almost all of us serving them at one time or another. Try them! You won’t be disappointed.

Servings: Serves 8

Ingredients:

  • 20 ounces frozen chopped spinach
  • 4 tablespoons butter
  • 3 eggs
  • 1 cup milk
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 pound aged cheddar, grated

Instructions:

  1. Thaw spinach and squeeze out as much moisture as possible.

  2. Melt butter in a 9X13 pan.

  3. In a mixing bowl, beat the eggs and add the milk. Sift flour, salt and baking powder together and add to egg mixture. Add the cheese and spinach. Transfer to pan.

    (You can refrigerate the “brownies” at this point for up to 24 hours or freeze for several weeks.)

  4. Bake at 350 degrees F for 35 minutes (longer if chilled) or until top is lightly brown.

    Cool slightly before cutting into 8 squares (about the size of a bread slice) and then in half into triangles.

    Serve with sausage, ham or bacon.
