There are nights when even those of us who love cooking just don’t have the energy or time to get into a big production, but we still have to eat and fast food doesn’t always appeal. Those are the nights when a one-pan dinner comes in very handy. It takes about 10 minutes to prep everything and then you just throw it in the oven for 30 minutes. You cook it on a sheet pan covered in foil so when you’re finished, you just throw the foil in the trash and there’s only one pan to wash.

- 6 cloves garlic - halved lengthwise
- 1/3 cup olive oil
- 1 large lemon
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons dried oregano
- 8 boneless skinless chicken thighs
- 3 large sweet potatoes
- 6 medium size Yukon Gold or redskin potatoes
- 1 lb green beans
- 1 onion
Take a large sheet pan or cookie sheet, cover with aluminum foil and spray with cooking spray. Turn oven on to preheat to 400 degrees.
In a medium bowl combine the garlic, olive oil, zest and juice of the lemon, salt, pepper and oregano. Put the chicken thighs in the bowl and let them marinate while the oven heats up.
Place on the sheet pan and put in the oven. Set timer for 10 minutes.
Meanwhile, scrub the potatoes, prick with a fork and microwave for about 3 minutes. Set aside. Peel the sweet potatoes, prick with a fork and microwave for 3 minutes. Cut the onion in half from end to end, and cut into 1/2 inch slices. Quarter the potatoes. Cut sweet potatoes into similar size pieces.
Toss potatoes, sweet potatoes and onion in the remaining marinade. When timer goes off, drain potato mix with a slotted spoon and add to the sheet pan. Return to oven and set timer for 15 minutes.
While that cooks, cut stem end off green beans and rinse them. Toss with remaining marinade.
When timer goes off again, add the green beans to the sheet pan and cook for about 7 to 10 minutes, or until beans are tender.
Dinner is ready! (Note - if you don't have a large sheet pan, use two smaller ones - it's best for everything to be a single layer deep rather than crowded on the pan.) Recipe makes 4 large servings or 8 smaller ones.
