Gin and Tonic Popsicle

Summer is definitely upon us, and many of us across the country are wilting. Need a pick up at the end of the day or a way to liven up a barbecue. Try a Gin and Tonic Popsicle!

Ingredients:

  • 3 cups tonic
  • 1 1/2 oz. gin (you can substitute vodka)
  • 1/2 lime, juiced
  • 1/2 c thinly sliced limes or cucumbers (optional)
  • lime zest (optional)
  • 1/3 cup sugar

Instructions:

  1. Mix the tonic, gin and lime juice together, mix in sugar and lime zest if you are using them. Place lime or cucumber slices in your Popsicle molds. Pour in the liquid. Add the top to your Popsicle molds and freeze 12-24 hours.

  2. What a great way to have your favorite cocktail this summer! Please note that this recipe has been taste-tested several times!
