Egg and Cheese Puffs

It doesn’t get any easier than this. I have been making these puffs for years to the absolute delight of our guests.  Just multiply by the number of people you are serving.  A homemade salsa is a great side to serve with this.

Ingredients, Per serving:

2 eggs

1 Tablespoon Cream

1 Tablespoon shredded cheese

Salt and pepper to taste

Chopped herbs

Directions:

Preheat the oven to 425F

Beat the eggs.

Combine the eggs and other ingredients well and pour into a well greased  8 oz ramekin.

Sprinkle with chopped or dried herbs.

Heat in the microwave on high for 1 min.

Remove and place in the oven for an additional 7 -10 min till puffed and beautiful.

Serve with a side of roasted potatoes and salsa (optional).

Prep Time: 5 Minutes
Cook Time: 10 Minutes
