Mandarin Orange Salad with Cranberry Pomegranate Dressing


For the salad:

Romaine lettuce
Spinach or
Spring Mix
Mandarin Orange Segments
Carrot, grated
Craisins (dried cranberries)

For the dressing

2 Tablespoons frozen cranberry juice concentrate
1/4 cup pomegranate juice or cranberry pomegranate juice
1/4 cup apple cider vinegar
2 teaspoons sugar
1 teaspoon mustard powder
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups canola oil


Arrange your choice of lettuce on a salad plate.  Top with mandarin orange segments and the carrot.
drizzle with dressing.  Sprinkle with Craisins and almonds that have been lightly toasted.

For the dressing:
Mix ingredients together.    Shake well and taste, adjusting seasonings as you prefer (salt, pepper and sugar).
